Finishing Up Our S.O.M.E. Chili
1 disposable aluminum pan - size 12 x 10 x 3
3 tbsp cooking oil
1 1/2 lb ground beef OR ground turkey
2 medium onions chopped
2 15-oz cans dark red kidney beans
1 28-oz can tomato sauce
4 cups cooked macaroni
1 package chili seasoning mix
Boil macaroni until al dente and set aside. Sauté onions and ground beef (or ground turkey) until well done. Drain excess grease. Add the remaining ingredients (beans, tomatoes, seasoning) to the macaroni.
Mix well, place in 12x10x3 pan (or equivalent, i.e., large enough to hold chili but not higher than 3"). Cover with aluminum foil only.
Chili is now ready to refrigerate until delivery. Keep in fridge for up to two days for delivery on Sunday.
A brief history of SOME
n 1970, Father Horace McKenna, S.J. and an interfaith group of priests, ministers, and lay persons founded So Others Might Eat to help feed the city's destitute citizens. The first meals were served out of the basement of St. Aloysius Church on North Capitol Street.
After several years, however, SOME founders saw needs beyond what the small soup kitchen could provide and began delivering additional services to support and nourish the neediest of our residents. Over the years, the mission of the organization broadened significantly.
In the 1970's, SOME started offering hot nutritional meals, launched a substance abuse program, and began a program for the homebound elderly. In the 1980's, SOME opened its Medical Clinic and also began helping the homeless find jobs. In 1989, SOME created its first affordable housing program for homeless single adults. In the late 1990's, more housing was opened and a job training program was launched.
In recent years, SOME has opened a number of affordable, dignified residences for homeless families and single adults throughout the DC metro area.
Still, SOME is best known for food; and, indeed, more than 1,000 meals are served each day in our dining room and other programs; but today, SOME offers comprehensive programs that meet a full spectrum of needs while giving a sense of dignity to the poor and homeless of the District of Columbia.
